Chocolate dates back to more than 4000 years to South American and the Mayan days, when May ans used cocoa beans as currency and only the very rich could afford to consumed it as drink (mixed it with spices, water and chillies to create a bitter drink). They also mixed cocoa beans with grain and flavourings to make a healthy meal (which would be considered inedible today!). We have come a long way from there to wide variety of chocolates and chocolate confectionary that we all love.

What follows are some definitions of different types of chocolate, plus a few other chocolatey terms for good measure. Generally the law defines what can be labeled unsweetened, bittersweet, semisweet, sweet, milk, and white chocolate, but the rest, well, the rest is up to the manufacturer and can get a bit confusing. We've tried to clear it up as much as possible.
